Mediterranean Farmer’s Pot

The perfect mediterranean farmer’s pot recipe with a picture and simple step-by-step instructions.

  • 500 g Waxy potatoes
  • 2 Paprika
  • 400 g Tofu mince e.g. from Berief
  • 4 Spring onions
  • 3 Tomatoes
  • 0,5 Eggplant fresh
  • 1 Can Chopped tomatoes
  • 750 ml Vegetable broth
  • 2 Tl Smoked paprika powder
  • 2 tsp Gyros / meat seasoning
  • 1 tsp Agave syrup
  • 2 tbsp Tomato paste
  • 3 tsp Herbal mixture Italian
  • Oil
  1. Peel and dice the potatoes. Dice the rest of the vegetables as well, cut the spring onions into rings.
  1. Fry the tofu mince in oil until brown, then add the potatoes and peppers and fry with them. Add the rest of the vegetables and briefly fry the tomato paste.
  1. Pour in the chopped tomatoes and broth. Add spices and herbs, add agave syrup. Bring to the boil and then simmer for about 30 minutes.
