Mediterranean Farmer’s Pot
The perfect mediterranean farmer’s pot recipe with a picture and simple step-by-step instructions.
- 500 g Waxy potatoes
- 2 Paprika
- 400 g Tofu mince e.g. from Berief
- 4 Spring onions
- 3 Tomatoes
- 0,5 Eggplant fresh
- 1 Can Chopped tomatoes
- 750 ml Vegetable broth
- 2 Tl Smoked paprika powder
- 2 tsp Gyros / meat seasoning
- 1 tsp Agave syrup
- 2 tbsp Tomato paste
- 3 tsp Herbal mixture Italian
- Oil
- Peel and dice the potatoes. Dice the rest of the vegetables as well, cut the spring onions into rings.
- Fry the tofu mince in oil until brown, then add the potatoes and peppers and fry with them. Add the rest of the vegetables and briefly fry the tomato paste.
- Pour in the chopped tomatoes and broth. Add spices and herbs, add agave syrup. Bring to the boil and then simmer for about 30 minutes.
