Mediterranean gnocchi casserole

Ingredients for 4 servings:

  • 500 g gnocchi from the refrigerated section
  • 1 m.-large onion(s), red
  • 1 garlic clove(s)
  • 125g mozzarella
  • 150 g cherry tomatoes
  • 2 cans of chopped tomatoes, 425 ml each
  • 75 g hard cheese (Grana Padano)
  • basil
  • oregano
  • Spice mix, Italian
  • salt and pepper
  • Sugar
  • 1 tbsp white wine vinegar
  • Oil for frying

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Reserve a few basil leaves for decoration and finely chop the rest. Preheat the oven to 220°C (top/bottom heat). Peel the onion and garlic. Finely dice the onion and fry. Crush the garlic and sauté both until translucent. Add the cherry tomatoes, season with the spice mix, oregano, and basil. Sauté for another 2 minutes. Deglaze with the chopped tomatoes and season with salt, pepper, a pinch of sugar, and vinegar. Cut the mozzarella into 0.5 cm thick slices. Fold the gnocchi into the tomato sauce with half of the Grana Padano. Add everything to the baking dish. Sprinkle the remaining cheese and the mozzarella slices on top. Bake the casserole for about 12-15 minutes, until the cheese is browned.
