Ingredients for 4 servings:
- 4 trout(s), whole, gutted
- 4 cloves garlic
- 2 limes, juice
- 150 ml dry white wine
- 150 ml olive oil
- 2 tbsp Italian herbs, frozen
- 1 tbsp fish seasoning mix
- salt and pepper
Instructions
Working time approx. 10 minutes; Rest time approx. 4 hours; Cooking/baking time approx. 12 minutes; Total time approx. 4 hours 22 minutes
Wash the trout and pat dry. Press or finely chop the garlic cloves, mix with the lime juice, a little lime zest, wine, olive oil, herbs, and fish seasoning to make a marinade, and season to taste with salt and pepper. Rub the mixture all over the trout, inside and out, and place it in a large freezer bag or shallow dish. Add the remaining marinade and chill for about 3-4 hours. Then place the trout in fish tongs and grill for about 5-7 minutes on each side, depending on the size. Serve with white bread or baked potatoes and a crisp salad.
