Salmon skewers

Ingredients for 4 servings:

  • 400 g salmon fillet(s)
  • 3 tbsp lemon juice
  • 4 tbsp olive oil
  • 1 tsp mustard
  • salt and pepper
  • 1 sprig(s) basil
  • 1 sprig(s) of thyme
  • 16 cherry tomatoes
  • 4 shallots
  • 1 clove(s) garlic

Instructions

Working time approx. 30 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 1 hour 12 minutes

Rinse the salmon fillet, pat dry, and cut into bite-sized pieces. Combine lemon juice with olive oil and mustard, season with salt and pepper. Stir in the chopped herbs and marinate the salmon pieces for 30 minutes. Wash the tomatoes, peel and halve the shallots. Thread the fish and the two prepared ingredients alternately onto 8 skewers and brush with the marinade (especially the vegetables). Cook the skewers either on the grill or under the broiler for about 12 minutes, turning frequently.
