Ingredients for 4 servings:
- 1 poulard(s) or large chicken
- salt and pepper
- some thyme sprigs
- some rosemary sprigs
- some basil
- 500 g potatoes
- 500 g onion(s)
- 500 g tomatoes
- some olive oil
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 1 hour 5 minutes; Total time approx. 1 hour 20 minutes
One-pot dish with potatoes, tomatoes and onions
Wash the chicken and pat dry. Pluck the herbs from the stems and chop. Season the chicken inside and out with salt, pepper, and herbs and place in a shallow casserole dish or baking sheet. Peel the potatoes and cut into wedges. Peel the onions, leaving small ones whole and halving or quartering larger ones. Arrange the potatoes and onions around the chicken, drizzle with a little olive oil, and roast in a preheated oven at 180°C for 45 minutes. Then add the tomatoes, coat everything with the cooking juices, and roast for another 15-20 minutes. A very practical dish, easy to prepare, and leaves the kitchen free.
