Ingredients for 1 servings:
- 1 chicken breast fillet(s)
- 2 tsp, heaped pesto, green
- ¼ pack of sheep or goat feta cheese
- 10 cocktail tomatoes
- 5 croquettes, frozen
- herbal salt
- Paprika powder
- olive oil

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes
quick and easy
Preheat the oven according to the instructions on the croquette package. Cut the chicken breast horizontally to create two thin pieces of meat. Season them with herb salt and paprika powder and sear briefly in a grill pan. The feta is already salty, so don’t be too generous with the salt. Place the meat in a baking dish and spread a thick layer of pesto on top. Crumble the feta over the meat. Halve the tomatoes and arrange them around the meat. Drizzle everything with a little olive oil. (I like to use a lot of olive oil, as the juices from the oil, pesto, tomatoes, and feta taste great and are also great eaten with bread.) Place the baking dish on a baking sheet, arrange the croquettes in the empty space on the tray, and bake until the croquettes are done.
