Mediterranean meatloaf

Ingredients for 1 servings:

  • 500 g minced meat, mixed
  • 200 g bacon, streaky, thinly sliced
  • 1 bell pepper(s), red
  • 1 small zucchini
  • 50 g celery (celery root)
  • 1 garlic clove(s)
  • 100 g feta cheese, approx. 1 cm cubes
  • 250 g mushrooms, fresh
  • 50 g olives, black, pitted
  • 1 egg(s)
  • Milk
  • 1 bread roll(s), dry
  • 1 tsp spice mix (Arrabiata spice mix)
  • 1 tsp herbs de Provence
  • Rosemary, chopped, fresh
  • 1 tsp vegetable broth
  • 1 tsp paprika powder
  • Parsley, fresh, finely chopped
  • 1 tsp salt
  • 1 tbsp olive oil
  • pepper
  • Thyme

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour 15 minutes; Total time approx. 1 hour 35 minutes

Cut the bread roll into small pieces and soak it in milk. Then squeeze it well. Finely chop the onion, celery root, and garlic and sauté it in olive oil. Add the cleaned and finely chopped mushrooms and sauté them. Transfer them to a bowl. Halve the olives. Combine all ingredients except the bacon in the bowl, mix well, and season with salt, pepper, and the spices. Place a few slices of bacon in a roasting pan. Place the meatloaf on top, shape it into a roast, and cover it with the bacon. The roast should be completely covered. Bake in a preheated oven at 180 degrees Celsius for 70 minutes. After about 20 minutes, add a little water.
