Mediterranean Oven Vegetables

- 1 Zucchini
- 1 Paprika
- 1 Onion
- 10 Date tomatoes
- 1 pack Feta
marinade
- 3 tbsp Oil
- 1,5 tbsp Balsamic crema
- 3 tbsp Tomato paste
- 1 tsp Salt
- 1 pinch Pepper
- 2 tsp Herbs of Provence
- 1 tsp Dried basil
- 0,5 tsp Dried chives
- 1 toe Garlic
- 1 Handful Cores
- Additional spices as required
- Cut the zucchini lengthways into quarters and then cut into slices max. 5 mm thick. Cut the bell pepper into 3-4 cm long strips. Halve tomatoes. Dice the feta, cut the onion into rings and pour everything into a bowl.
- Put all the ingredients for the marinade and the pressed garlic in a bowl and stir well. Then pour over the vegetables & feta, mix everything well and let it steep in the refrigerator (15 minutes – as long as you want and the vegetables stay fresh).
- Put the marinated vegetables and the feta in a baking dish and fry them at 200 ° C (top / bottom heat) for 10 minutes, then at 250 ° C for another 10 minutes.
- Tip 4: Other vegetables such as mushrooms or aubergines are also conceivable. You can do anything you like.
