Ingredients for 1 servings:

  • 250 g potatoes
  • 1 bell pepper(s), red, green or yellow
  • 50 g mushrooms, brown
  • 1 m.-sized onion(s)
  • 1 tbsp Mediterranean herbs, dried
  • 1 garlic clove(s)
  • Salt and pepper from the mill
  • 4 cherry tomatoes
  • 2 tbsp olive oil
  • possibly butter or vegan butter substitute

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

It’s best to make jacket potatoes from the potatoes the day before. Slice the potatoes and fry in olive oil until golden brown. In the meantime, deseed and dice the bell peppers, slice the mushrooms, halve the onion and also finely slice it, and finely dice the garlic. When the potatoes are crispy, add the bell peppers, mushrooms, garlic, and onion, toss to coat, and season with salt, pepper, and the herb mixture. Then fry everything in an uncovered pan for another 10 minutes. Just before the end, add the quartered cherry tomatoes. If you’re not watching your calories, you can also add 1 tablespoon of butter at the end.
