Potato – mushroom – pepper – hash

Ingredients for 4 servings:

  • 750 g potatoes, firm-cooking, diced
  • 2 tbsp olive oil
  • 2 cloves garlic, finely chopped
  • 1 red pepper(s), cut into strips
  • 1 green bell pepper(s), cut into strips
  • 1 yellow pepper(s), cut into strips
  • 2 tomatoes, diced
  • 150 g mushrooms, sliced
  • 1 tbsp Worcestershire sauce
  • Basil, fresh
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Boil the potatoes for 10 minutes. Heat the oil in a large pan and fry the potatoes for 10 minutes, stirring constantly. Add the bell peppers and garlic and sauté for 5 minutes. Add the mushrooms and tomatoes and simmer for another 10 minutes. Add the Worcestershire sauce and basil leaves, stir to combine, and season with salt and pepper.
