Ingredients for 4 servings:
- 600 g beef, cooked
- 5 gherkins
- 2 shallots
- 1 garlic clove(s)
- 1 tbsp parsley, chopped
- 1 tbsp capers
- 2 anchovy fillets, pickled
- 1 tsp mustard, medium hot
- 1 tbsp vinegar, mild
- 4 tbsp olive oil, or a mixture of olive and neutral oil
- salt and pepper
- Meat broth, cold, approx. 2 – 4 tbsp
- 1 tbsp basil
- 2 tomatoes
Instructions
Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes
Cut the beef into thin slices (slicing thickness). Finely dice the gherkins and peeled shallots. Rinse the anchovy fillets, pat dry, and finely chop. Peel and dice the garlic, and crush it with a little salt. Prepare a marinade of mustard, vinegar, oil, meat broth, salt, and pepper. Mix the gherkins, shallots, garlic, anchovies, and parsley. Spread over the meat and let it marinate for at least one hour, preferably two. Quarter, deseed, and finely dice the tomatoes. Arrange the meat slices in a fan-shaped pattern on serving plates, sprinkled with basil strips and diced tomatoes, and serve with ciabatta or baguette.
