Mediterranean-style vegetarian burger with pasta patty

Ingredients for 2 servings:

  • 2 ciabatta rolls
  • 125 g tagliatelle, green
  • 4 tbsp aioli
  • 2 tbsp pesto rosso
  • 2 handfuls of mixed salad, e.g. with carrots, radicchio, lettuce etc.
  • some freshly sliced ​​Parmesan
  • Salt
  • 2 tbsp oil

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

A patty made from green tagliatelle gives this burger a special touch

To make the pasta patties, bring pasta water to a boil with a little salt, then cook the pasta al dente according to the instructions. Drain and do not rinse with water! Divide the pasta into two portions, shape into patties, and press them together slightly. This way, they will stick together well when they cool, making them ideal for frying. Trim and wash the lettuce, then cut or tear into strips or pieces. Heat a pan with oil and fry the pasta patties until crispy on both sides. Then drain briefly on a paper towel. Assemble the burgers as follows: Cut the ciabatta buns in half, spread a tablespoon of aioli on the bottom half, top with lettuce, and add another tablespoon of aioli. Place a pasta patty on top, grate some Parmesan over it, and then top with a tablespoon of pesto rosso. Place the top half of the ciabatta bun on top, and enjoy!
