Mediterranean-style white cheese

Ingredients for 4 servings:

  • 1,000 g cheese (white cheese or feta cheese, at least 55% fat)
  • 1,000 ml oil (sunflower oil)
  • 3 cloves garlic
  • 3 tsp, heaped herbs, Italian style
  • 6 tsp heaped oregano
  • 3 tsp, heaped paprika powder, coarse (Aci Biber)
  • 6 chili pepper(s), red, dried
  • 1 onion(s), red

Instructions

Working time approx. 30 minutes; Rest period approx. 1 day; Total time approx. 1 day 30 minutes

Slice the onion into rings and the cheese into cubes. Deseed and thinly slice the chilies. Peel the garlic cloves and slice them very thinly. Combine the spices and oil and stir well. Add the onion, garlic slices, chili rings, and cheese and mix gently. Cover and let marinate in the refrigerator for at least 24 hours. Make sure everything is covered with a layer of oil. The cheese will keep in jars for about 3 weeks. By adding sun-dried tomatoes and black olives, you can even create first-class antipasti. Of course, you can eat the onion, garlic, and chili rings if you like.
