Mediterranean tarte flambée

Ingredients for 1 servings:

  • 1 tarte flambée dough
  • 5 tbsp tomatoes, pureed
  • ½ onion(s)
  • 2 handfuls of arugula
  • 1 large tomato(s)
  • 1 handful of Parmesan
  • 1 shot of balsamic cream
  • salt and pepper
  • chili powder
  • basil
  • oregano

Working time approx. 15 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 20 minutes

First, preheat the oven to 250 degrees Celsius (fan/convection oven). Peel the onion and slice half of it into thin rings. Spread the tarte flambée base with more or less tomato puree, depending on its size. Sprinkle the base generously with the spices listed and/or any other seasonings you like, and scatter the onion rings over the base. Bake the tarte flambée in the oven for a few minutes as directed, checking the dough frequently. While it’s baking, wash the arugula, wash the tomatoes and chop them if desired, and thinly slice the Parmesan or Montello cheese. Once the tarte flambée is baked, scatter the tomatoes over the base, along with the cheese and arugula leaves. Finally, drizzle a few drops of balsamic vinegar over the entire base.
