Ingredients for 2 servings:
- 1 large zucchini
- 2 bell peppers
- 150 g cherry tomatoes
- 1 large onion(s)
- 2 garlic cloves
- 100 ml vegetable stock
- 1 tbsp tomato paste
- 1 tsp paprika powder
- 1 tsp oregano
- 1 tsp basil
- salt and pepper

Cut the zucchini and bell pepper into pieces. Slice the onion. Crush the garlic. Sauté the zucchini, bell pepper, onion, and garlic and season with salt, pepper, and hot paprika. Add the tomato paste and sauté. Add the cherry tomatoes and vegetable stock, season with basil and oregano, and cook with the lid on at medium heat for about 5 minutes.
