Ingredients for 1 servings:
- 1 bunch of spring onions
- 200 g feta cheese
- 50 g tomatoes, dried
- 200 g herb quark (tzatziki)
- 375 g flour
- 1 packet of yeast (yeast dough garant)
- 1 pinch of salt
- 175 ml milk
- 1 egg white
- 50 ml olive oil
- Flour for the work surface
- Fat for the mold

Bread of the South
Peel, wash, and finely chop the spring onions. Dice the feta cheese and sun-dried tomatoes very finely. Mix the spring onions, feta, and diced tomatoes with the tzatziki and season with pepper. Sift the flour into a mixing bowl and carefully mix with the yeast. Add the salt, milk, egg whites, and oil. Using a hand mixer, knead everything for about 2 minutes until you have a smooth dough. Roll out the dough on a lightly floured surface and spread the filling on it, leaving about 1 cm free at the edges. Roll the dough up from the shorter sides to the center and place it in a greased loaf or bread pan and let it rest for 15 minutes. Beat the egg yolk and brush it over the bread. Cut any pattern you like into the surface with a knife. Bake in the lower third of a preheated oven at 160°C fan/convection oven for about 45 minutes. Let the bread stand in the pan for another 10 minutes, then remove it and let it cool.
