Ingredients for 4 servings:
- 3 eggs
- 4 m.-sized potatoes
- ½ cucumber(s)
- 1 bunch of radishes
- 150 g meat sausage, ham sausage or other types of sausage
- e.g. fresh herbs (parsley, dill)
- 1 tbsp sour cream
- 1 tsp horseradish, hot
- 500 g kefir or buttermilk
- 1 liter of mineral water
- 1 shot of vinegar
- Salt and pepper, black
- n. B. Spring onion(s), chopped

cold Russian summer soup
Boil the eggs hard. Cook the potatoes with the skin on until tender. Let both cool, then peel and cut into small cubes. Peel the cucumber and grate it along with the radishes. Clean and chop the fresh herbs and spring onions. Place all ingredients in a pot and mix well. Dissolve the kefir in mineral water at a ratio of 1:2 (up to 1:3). Pour the kefir-water mixture into the pot and fill it up. Season to taste with sour cream, horseradish, vinegar, salt, and pepper, and serve. Tip: You can also add any kind of leftover meat from the day before.
