Ingredients for 2 servings:
- 1 zucchini
- 200 g mushrooms
- 200 g feta cheese
- 2 spring onions
- 2 garlic cloves
- 1 pack of cherry tomatoes
- salt and pepper
- oregano
- Thyme
- olive oil

Dice the zucchini, mushrooms, and feta cheese and place in a baking dish. Finely slice the spring onions, finely chop or press the garlic cloves, add them to the baking dish along with the spring onions, and mix everything gently. Season with salt, pepper, oregano, and thyme to taste. Drizzle everything with olive oil and, covered with aluminum foil, place in the oven at 200 degrees Celsius. The tomatoes can be placed on top of the vegetables a few minutes before the end of the cooking time. Then re-cover the dish with aluminum foil. The cooking time depends on the baking dish. For an enameled baking dish, the cooking time should be approximately 45 minutes. For a ceramic baking dish, approximately 1 hour and 15 minutes. Rice, pasta, or baguette go very well with this dish.
