Carrot soup

Ingredients for 3 servings:

  • 1 kg carrot(s)
  • 300 g pork belly or belly rib with bone
  • 300 g potatoes
  • 3 tbsp marjoram
  • 3 tbsp, levelled sugar
  • 3 tsp, leveled salt
  • some pepper
  • e.g. margarine or oil

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cut the carrots and potatoes into small cubes. Lightly sauté the carrots in a pan or saucepan with a little margarine or oil. Transfer to a soup pot and add enough water so the carrots float. Then add the pork belly (in whole strips), the potatoes, marjoram, sugar, salt, and pepper, and simmer for 30-40 minutes. Then remove the meat, chop it up, and trim it (however you like it). Return the meat to the pot and season with salt and sugar. If you like, you can mash the carrots and potatoes on the plate. This will give it a more intense carrot flavor.
