Melon salad

Ingredients for 5 servings:

  • 400 g watermelon(s)
  • 400 g honeydew melon(s)
  • 400 g cucumber(s)
  • 200 g feta cheese
  • 3 tsp honey
  • 2 tbsp herb vinegar
  • 4 tbsp oil
  • 3 tbsp sugar
  • 1 lemon(s)
  • salt and pepper
  • Herbs, frozen (e.g. 8-herb mixture)
  • Almond sticks
  • some butter for frying

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Dice the watermelon, honeydew melon, and cucumber and mix together. It’s best to let the mixture stand for a while, as a lot of water will still run out. Then add the diced feta cheese. Squeeze the lemon and make a dressing from the lemon juice, honey, sugar, vinegar, and oil. This works best in a shaker; shake vigorously to dissolve the honey. Season the dressing with salt and pepper and mix in the herbs, depending on how much you like. Finally, pour the dressing over the salad and mix well. Toast the slivered almonds with a little butter and sprinkle over the salad. This salad goes perfectly with grilled meat in the summer. Super fruity and light.
