Melon, feta and fig salad

Ingredients for 2 servings:

  • 500 g melon(s) of your choice
  • 200 g feta cheese
  • 2 tbsp sherry vinegar
  • 4 tbsp olive oil
  • 1 tbsp, heaped honey
  • e.g. salt and pepper
  • n. B. Thyme
  • 10 small figs
  • e.g. lemon balm

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

with cantaloupe, cavaillonne or watermelon

Peel the melon and dice it. Dice the feta and mix it with the melon. Combine the sherry vinegar, oil, and honey, and season with salt and pepper. Add the thyme leaves. Mix the dressing with the melon and feta cubes. Halve the figs, add them to the salad, and garnish with lemon balm.
