Melon with mozzarella and basil

Ingredients for 4 servings:

  • 1 melon(s), ripe, orange-fleshed (e.g. cantaloupe)
  • 400g mozzarella
  • 1 onion(s), red
  • basil
  • Sea salt
  • 2 lemon(s) juice
  • 6 tbsp olive oil
  • black pepper, freshly ground

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Deseed the melon and cut into wedges. Scoop out the flesh and slice. Slice the mozzarella. Layer the melon and mozzarella alternately in a large bowl. Season with sea salt and drizzle with lemon juice. Drizzle with olive oil. Finely slice the red onion and arrange it over the mozzarella and melon. Sprinkle with chopped basil. Cover with aluminum foil and let it marinate for at least 30 minutes. Serve with a fresh baguette. A wonderfully light summer dish or a delicious appetizer.
