Melons – Passion Fruit Jam

- 800 g Galia melon
- 3 piece Passion fruit
- 200 ml Passion fruit juice
- 1 piece Pear
- 600 g Preserving sugar 2: 1
- Core the galia melon and cut out the pulp and dice. Peel, core and finely chop the pear. Add the passion fruit pulp together with the juice and puree everything finely. Weigh out the mixture, add proportion of the preserving sugar and fold in. Let the mass steep for about 2 hours.
- Then bring the mass to the boil while stirring and boil it vigorously for a good 4 minutes, then make a gelling test, if the mass has gelled remove the foam, otherwise let the mass boil a little and do another gelling test.
- Pour the finished mixture into prepared glasses.
