Cinnamon Waffle Slices with Crispy Filling
The perfect cinnamon waffle slices with crispy filling recipe with a picture and simple step-by-step instructions.
Waffles:
- 125 g Butter
- 200 g Sugar
- 0,5 Pck. Burbon vanilla sugar
- 2 Eggs
- 70 ml Cream
- 250 g Flour
- 15 g Cinnamon
- 1 tube Taste of rum
Crunch filling:
- 40 g Corn flakes (simple)
- 60 g Sugar brown
- 1 tsp Speculoos seasoning
Cream filling:
- 100 g Chocolate white
- 120 g White couverture
- 50 ml Cream
- 30 g Marshmallow cream (fluff) see my KB
- 1 tube Bitter almond flavor
- 0,5 tube Taste of rum
Waffles:
- Beat the butter, sugar and vanilla sugar until frothy. Gradually stir in the eggs. Add the cream, cinnamon, rum aroma and flour and mix everything with the mixer hook of the hand mixer to a thick batter. Let the dough rest for 1 hour.
- Use the cinnamon waffle iron to bake flat waffles in portions. Separate them while they are still warm and let them cool down.
Crunch:
- Put the cornflakes without fat in a pan. Mix sugar and spices and sprinkle over them. Melt the sugar over medium heat and use it to caramelize the cornflakes. Immediately place on a sheet of parchment paper and spread out flat. Let it harden.
Cream:
- Melt the cream, chocolate and couverture in a saucepan at a mild temperature. Stir it every now and then. It shouldn’t boil, so not too hot and with a little patience. Then pour the homogeneous mass into a mixing bowl and let it cool down a little. Add marshmallow cream and flavorings and stir in vigorously. Let the mass set in the refrigerator until the next day.
- First, finely chop the crunch with a large knife. Beat the solidified chocolate mass with the whisk of the hand mixer until creamy. Add the crunch and stir everything vigorously again.
Completion:
- Spread out the waffles in pairs on a mat. Always put a large dollop of filling on a waffle and press it flat with the back of a teaspoon (dipped in hot water) up to the edge of the wafer. Put the other half on top and press on. Smooth out any bulging filling with a moistened fingertip.
Annotation:
- The above amount of dough resulted in more waffles than were filled later. The reason: They don’t all bake evenly, so I didn’t fill the not so nice ones. But you can eat them just like that with coffee.
- The waffles are slowly getting into the mood for Advent and are delicious finger food for the coffee table. With the appropriate filling, they are also suitable for making your own Hanuta waffles. However, the amount of cinnamon in the dough should not be so high. HANUTA FILLING FOR ALL MOTHER: 200 g whole milk couverture, 50 g dark chocolate, 50 ml cream, 1 packet of nougat (baking shelf in the supermarket), 150 g finely chopped hazelnuts. Heat the cream in a saucepan at a mild temperature, but do not boil it. Melt the coarsely chopped couverture and chocolate in it. Then stir in the roughly chopped nougat and fold in the nuts. Let the mixture solidify in the refrigerator. Then whip again and fill the waffles as indicated in the recipe. … With a little help, the kiddis can make their own hanuta.
- For everyone who is interested: You can get the special waffle iron for “little money” from Amazon, and it’s worth it. It is offered under the name “cinnamon waffle iron”. I took the cheapest of all and am satisfied.
