How to melt the chocolate in a water bath
Of course, you can melt any chocolate. However, if you need particularly thin chocolate, choose a chocolate with a very high cocoa content: the higher the cocoa content, the thinner the chocolate will be when it is melted.
- First, crush the chocolate block with a sharp knife or a chopping knife. Alternatively, simply put the chocolate in a food processor.
- Then heat a pot with water, not filling the pot completely, but leaving a rim.
- Make sure the water gets hot but not boiling. The water temperature also depends on whether you want to melt dark or white chocolate: for dark chocolate, the temperature should be around 50 degrees, white chocolate melts best at around 45 degrees.
- In the water pot, hang a metal or glass bowl that does not touch the bottom of the pot. The water must also not bubble up into the bowl so that the chocolate does not come into direct contact with the water.
- While the chocolate melts, stir it occasionally.
