Meringue Tartlets with Blueberries

- 0,5 tsp Potato starch
- 0,5 tsp Apple Cider Vinegar
- 1 pinch Salt
- 145 g Sugar
- 1 Cup Blueberries
- 0,25 Cup Sugar
- 1 tsp Lemon juice
- 1 tsp Lemon peel
- 0,25 Cup Corn syrup
- 1 Pc. Mint
- For the meringue, beat the egg white with the potato starch, apple cider vinegar and salt until frothy. Gradually let the sugar trickle in. Preheat the oven to 120 ° C. Place a good tablespoon of the meringue on a baking sheet lined with baking paper and make a well with a spoon. Bake for about 80 minutes at 120 ° C.
