Ingredients for 1 servings:

  • 4 egg whites, approx. 140 g
  • 200 g sugar, fine
  • some lemon juice
  • n. B. food coloring

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 1 hour 50 minutes

Beat the cold egg whites until very stiff, then fold in a few drops of lemon juice. This gives it extra stability. Gradually add half of the sugar while beating vigorously, continuing to beat until the mixture is firm enough to cut. Fold in the rest of the sugar all at once, continuing to beat vigorously until the mixture is very stiff, smooth, and glossy. Immediately pipe various shapes onto a baking sheet lined with baking paper using a piping bag or cake syringe. Slowly dry in a preheated oven at 100-120 degrees Celsius (top/bottom heat), for 60-90 minutes depending on the size. The meringues must NOT turn brown. You can also color small amounts with food coloring and pipe them onto the baking sheet to make rings, hearts, or pretzels—the sky’s the limit. Then garnish with cookies or decorative pearls. When they’re ready, they’ll be a slightly different but delicious Christmas tree decoration.
