Mettklößchen vegetable soup

Ingredients for 4 servings:

  • 1 onion(s)
  • 300 g pork mince
  • 1 egg yolk
  • salt and pepper
  • 2 carrots
  • 1 stalk(s) leek
  • 600 g cauliflower
  • ½ bunch parsley
  • 725 ml vegetable broth
  • 1 shot of Cremefine, more if desired
  • 2 tbsp flour

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Peel the onion and cut into small cubes. Knead them with the ground beef, egg yolk, breadcrumbs, salt, and pepper. With slightly moistened hands, form them into dumplings. Clean the vegetables and cut them into small pieces/rings. Bring the broth to a boil and let the dumplings simmer for about 10 minutes, then remove them from the pan. Now cook the carrots and cauliflower for 10 minutes. Since the leek doesn’t need as much cooking time, it’s enough to cook for five minutes. Now mix the flour with the cream of creme and stir into the soup. Let everything cook together for another five minutes. Finally, add the dumplings to the soup. 390 kcal per serving.
