Mettwurst Pancakes with Lettuce

Ingredients for the pancakes:

  • 300g wheat flour
  • 300ml milk
  • 3 eggs
  • 3 Mettwurst
  • 3 onions
  • 50ml Mineral water
  • Salt
  • pepper
  • nutmeg
  • 50ml frying oil

Separate the eggs and beat the egg whites in a bowl until stiff. In another bowl, mix the egg yolks with the flour, milk, water, and spices to form a smooth batter. Fold the egg whites into the mixture and set aside. Cut the sausages into slices. Peel the onions and cut them into strips.

Preheat the oven to 180 degrees. Heat the oil in a pan. Fry the Mettwurst and onions in it and pour the pancake batter over it. Fry everything briefly, then bake in the oven for another 5 minutes. Remove from the oven and turn the pancake using a saucepan lid or large plate. Leave in the warm pan for 2-3 minutes so that the other side takes on some color as well.

Ingredients for the salad:

  • 250 g lettuce
  • 20mlApple Cider Vinegar
  • 20ml olive oil
  • 10g Mustard
  • 1 pinch of Brown sugar
  • 1 bunch chives

Wash and spin dry the lettuce. Make a sauce from vinegar, olive oil, mustard, and sugar and mix with the lettuce. Cut the chives into rolls and fold them in

Serving:

Turn the pancake out onto a cutting board, portion, and place on a plate. Serve the salad as a topping on the pancake.
