Ingredients for 4 servings:
- 1 kg potatoes
- 1 can coconut milk
- 200 ml cream
- 2 tsp curry
- 1 bunch of spring onions
- 2 eggs
- some orange juice
- salt and pepper
- Cayenne pepper
- oil
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Peel the potatoes and slice them thinly. Bring the coconut milk to a boil and cook the potato slices for 10 minutes. Strain the slices through a sieve, reserving the coconut milk. Finely chop the spring onions and mix with the rest of the ingredients. Grease a gratin dish with a little oil, place the potato slices in it, and pour the sauce over them. Preheat the oven to 180°C and bake the gratin for 20 minutes.
