Ingredients for 4 servings:
- 250 g Mie noodles, instant noodles
- 500 g chicken breast
- 1 bell pepper(s), red
- 250 g broccoli
- 2 garlic cloves
- 1 tsp vegetable stock powder
- 2 tbsp peanut butter
- 1 tsp sambal oelek
- 3 tbsp peanuts, roasted and salted
- 1 organic lime(s)
- ½ onion(s)
- Oil for frying
- salt and pepper
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes
Clean and wash the bell peppers and cut into strips. Clean and wash the broccoli and chop it into smaller pieces if necessary. Peel and finely chop the garlic cloves. Wash the meat, pat dry, and cut into cubes. Heat oil in a wok or high-sided frying pan. Fry the meat all over for about 4 minutes. Add the garlic and bell peppers and fry for about 2 minutes. Pour in 600 ml of water. Stir in the broth and peanut butter and bring to a boil. Add the noodles and broccoli to the pan with the meat. Cover and simmer for about 2 minutes, stirring occasionally. Add the sliced lime and simmer for another 2 minutes. Season to taste with salt, pepper, and sambal oelek. Meanwhile, in a small separate pan, gently roast the onions and then the coarsely chopped peanuts. Sprinkle the peanuts and onions over the finished dish. Serve with lime wedges, if desired. Approx. 570 kcal per serving.
