Ingredients for 4 servings:

  • 2 onions
  • oil
  • 300 g bell pepper(s), preferably yellow
  • 300 g cucumber(s), peeled
  • 300 g tomatoes, peeled, or 1 small can of chopped tomatoes
  • salt and pepper

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

Clean and dice all ingredients. Sauté the diced onion in oil in a large pot until translucent. Add the remaining diced ingredients, sauté for 10 minutes, then simmer on low heat for another 10 minutes. Season to taste. I like it served as a main course with boiled potatoes. Tips: This preparation makes the dish quite soft and very mild. To make it even more digestible, grill the peppers in the oven shortly beforehand and peel off the skin. You can also season it to taste with chili or Tabasco, sweet or hot paprika, garlic, sweet and sour with vinegar, and sugar.
