Parsley root and potato mash

Ingredients for 2 servings:

  • 250 g parsley root(s)
  • 250 g potatoes
  • 1 clove(s) garlic
  • 150 ml vegetable broth, possibly homemade
  • e.g. salt and pepper
  • n. B. Nutmeg
  • 1 tbsp parsley, chopped

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

dairy-free

Peel and chop the root parsley, potatoes, and garlic. Simmer the vegetables in the vegetable broth for 12-20 minutes until tender. The cooking time depends on the heat and the size of the pieces. It can also be steamed in a pressure cooker in about 3-4 minutes. After boiling or releasing the steam from the pressure cooker, mash and season to taste. Fold in the parsley or sprinkle it on top. Serve as a side dish. For a main course, I recommend making more.
