Millet risotto with mushrooms

Ingredients for 2 servings:

  • 1 small onion(s)
  • 400 g mushrooms or other mushrooms (e.g. chanterelles)
  • 350 ml water
  • 1 tbsp vegetable broth
  • 125 g millet
  • lots of grated Parmesan cheese (amount to taste)
  • 1 dash of cream or sour cream or soy cream

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Chop the onion and sauté with the mushrooms. Deglaze with water and add the vegetable stock. Add the millet. Let it simmer for 15 minutes over low heat. Season to taste with Parmesan cheese and cream or sour cream.
