Millet – vegetable dish

Ingredients for 4 servings:

  • 250 g millet
  • 600 ml vegetable stock
  • 50 g butter
  • 2 large onions
  • 2 bell peppers, colored
  • 1 cucumber(s)
  • 7 tomatoes
  • herbal salt
  • pepper
  • Thyme
  • 100 g cheese, grated
  • 1 bunch parsley, chopped
  • possibly feta cheese
  • possibly olives, chopped

Working time approx. 20 minutes; Total time approx. 20 minutes

vegetarian millet dish with vegetables (simple but very tasty!)

Wash the millet in hot water and add it to the boiling vegetable broth. Bring to a boil and simmer for about 40 minutes at low heat. Finely chop the vegetables, sauté them in the melted butter, and season with herb salt, pepper, and thyme. Mix the vegetables, millet, and cheese, season to taste, and sprinkle with parsley. Variation: For an even spicier flavor, use finely diced feta cheese instead of the grated cheese and add some chopped green olives.
