Ingredients for 6 servings:

  • 200 g fresh herbs for green sauce
  • 500 g quark (low-fat quark)
  • 250 g yogurt
  • 125 g sour cream
  • 1 clove(s) garlic
  • 1 onion(s)
  • 6 gherkins
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tbsp mustard
  • 10 eggs
  • 500 g potatoes

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Peel the potatoes and boil them in salted water (22 minutes). Hard-boil the eggs (7 minutes). Finely chop the herbs, onion, cucumber, and 2 eggs and place them in a bowl. If the herbs aren’t finely chopped enough, use a blender to chop them finely. Combine the mustard, garlic, olive oil, and lemon juice and add them to the bowl. Add the quark, yogurt, and sour cream and stir in. Season with salt and pepper. Let stand for at least an hour and serve with boiled potatoes and eggs.
