Minced beef, leek, apple and cheese soup

Ingredients for 2 servings:

  • 200 g minced beef
  • 1 tbsp oil
  • 1 onion(s)
  • 200 g leek
  • 1 spring onion(s)
  • 300 g vegetable stock
  • 1 apple
  • Salt
  • pepper
  • 50 g blue cheese (Castello blue)

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes

A recipe for two

Heat the oil in a pan and fry the minced meat until crumbly. Add the peeled and finely diced onion to the meat and fry. Slice or roll the trimmed leek and spring onion and mix in. Pour in the stock, season with salt and pepper. Bring to a boil once, then cover and simmer over low heat for 15 minutes. Five minutes before the end of the cooking time, stir in the peeled, cored, and diced apple. Turn off the heat and season to taste. Cut 25g of cheese into five thin slices and arrange them on the bottom of a soup bowl. Immediately top up with hot soup, garnish, and serve.
