Minced meat and bean pot

Ingredients for 4 servings:

  • 100 g bacon, streaky
  • 2 tbsp oil
  • 2 m.-sized onion(s)
  • 400 g minced pork or
  • Minced meat, half and half
  • 500 g beans (princess beans)
  • 2 garlic cloves
  • 250 g tomatoes
  • 2 bell peppers, red or yellow
  • ½ tsp paprika powder, sweet
  • some sage (shredded)
  • savory, (shredded)
  • Vegetable stock cubes or powder
  • Water

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

Soup – ideal as a party dish

Finely dice the bacon and fry in hot oil until translucent. Finely dice the onions, add to the bacon, and sauté until translucent. Add the minced meat and fry briefly. Simmer over low heat. Trim and break the beans, then add them to the minced meat along with the hot stock, savory, garlic, and salt. If using canned beans, drain the stock and add it to the minced meat. Simmer gently for 30 minutes. Meanwhile, wash the bell peppers, deseed them, remove the white pith, and slice them into thin strips. Score the tomatoes and briefly place them in boiling water. Peel off the skin, halve, deseed, and dice finely. Add the bell peppers and tomatoes to the minced meat. Add a little more water if necessary. Add the spices. Let the bean stew simmer for another 15-20 minutes. Serve with farmhouse bread and beer.
