Ingredients for 3 servings:
- 2 small onions
- 2 bell peppers, red
- 250 g minced beef
- 250 g rice pudding
- ½ liter vegetable broth
- ½ liter tomato juice, approx.
- 4 tbsp Parmesan, grated
- Rapeseed oil

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Peel and finely dice the onions and bell peppers. Briefly sauté them in hot oil, then add the ground beef and fry. Add the rice, pour in the broth, and let it simmer uncovered. Just before the liquid has evaporated, gradually add the tomato juice until the rice is cooked and the right consistency is reached. Stir in the Parmesan cheese at the end. We like it best with arugula.
