Minced meat sauce

Ingredients for 4 servings:

  • 400 g minced meat, mixed
  • 1 small can of tomatoes
  • 1 tsp tomato paste
  • 1 small onion(s)
  • ½ liter red wine
  • 2 tomatoes, fresh
  • 1 garlic clove(s)
  • Olive oil for frying
  • salt and pepper
  • Herbs, Italian style, fresh or dried

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Peel and dice the onions and garlic. Wash and chop the tomatoes. Heat olive oil in a pan and fry the diced onions and garlic. Add the minced meat and fry until crisp. Then add the canned and fresh tomatoes. Season with salt, pepper, and Italian herbs. Simmer the minced meat and tomatoes over high heat until the mixture is almost dry. Then add the first sip of red wine and reduce the heat to low. Wait until the red wine is absorbed by the minced meat and add just enough red wine to lightly coat the meat. The whole thing should simmer for at least 4 hours, adding more red wine occasionally. The meat sauce should be dark and rich in the end. Just before removing the sauce from the heat, season again with herbs, pepper, and salt. Serve with cooked pasta of your choice. Tip: If you like, you can refine the sauce with a little sour cream at the end. Of course, you can also alternate the dish with vegetable broth, but then the taste won’t be as strong.
