Minced meat – tomato soup

Ingredients for 8 servings:

  • 3 onions
  • 650 g minced beef
  • 3 tbsp tomato paste
  • 2 large cans of tomatoes
  • 1 small can of tomatoes
  • 1 liter vegetable broth
  • 1 chili pepper(s) as desired
  • Cayenne pepper
  • 3 tbsp brandy
  • 2 tbsp pepper, pickled green (can also be omitted)
  • Crème fraîche
  • Parsley
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Sauté the diced onions, add the ground beef, and fry until crumbly. Stir in the tomato paste. Add the chopped or pureed canned tomatoes. For extra heat, either chop the chili pepper or halve it (it’s easier to remove later) and add it with or without the seeds. Pour in the broth and season with salt, pepper, and cayenne pepper. Add the brandy and pickled green peppercorns. Simmer for about 1/2 hour. Serve sprinkled with crème fraîche and finely chopped parsley.
