Ingredients for 4 servings:
- 3 tomatoes
- 1 onion(s)
- 1 garlic clove(s)
- 1 carrot(s)
- 1 bunch of parsley
- 50 g bacon
- 250 g minced meat
- 2 tbsp butter
- 2 tbsp olive oil
- 1 ½ liters of broth
- 200 g pasta
- 4 tbsp Parmesan
- salt and pepper
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 2 hours
Midnight soup
Peel the tomatoes, onion, and garlic. Purée the carrot, parsley, and bacon in a blender until a paste forms. Mix this with the minced meat. Heat 1 tablespoon of butter and the oil in a saucepan. Sauté the minced meat and vegetables for 15 minutes. Add hot broth and simmer for 1 hour. Cook the pasta in the soup, then adjust the seasoning if necessary.
