Ingredients for 4 servings:
- 1 red bell pepper(s)
- 1 bell pepper(s), yellow
- 1 bell pepper(s), green
- 4 tomatoes
- 1 small can of green beans
- 2 small onions
- 2 tbsp water
- 1 tbsp olive oil, cold squeezed
- 1 tbsp tomato paste
- salt and pepper
- 1 bunch of parsley
- 1 can/n tuna, in water
- Paprika powder
- sweetener
- 1 cucumber(s)
- Vinegar
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Clean and wash the bell peppers and cut into small strips. Wash the tomatoes and cut into eighths. Peel the cucumber, halve it, and thinly slice it. Finely chop the onions. Mix them with the drained green beans in a bowl. Make a marinade from vinegar, water, tuna water, and oil. Season with tomato paste, salt, pepper, paprika, and sweetener. Finely chop the parsley and stir it into the marinade. Toss the salad with the marinade and let it marinate briefly. Finally, scatter the lightly shredded tuna over the salad. Per serving: 1.1 g fat, 4.4 g protein, 0 BE.
