Ingredients for 4 servings:

  • 10 tbsp olive oil, cold squeezed
  • 1 large onion(s), finely chopped
  • 200 g raw Italian ham, well marbled
  • 2 liters of water
  • 1,500 g vegetables (potatoes, pumpkin, cauliflower, broccoli, carrots,…)
  • 400 g beans (giant)
  • 2 small tomatoes
  • Basil, oregano, rosemary
  • Sea salt, coarse-grained
  • Pepper, crushed
  • 150 g pasta, small, for soups

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Heat the oil in a large, wide pot and cook the onion until translucent. Add the ham. Fill with water and simmer gently for one hour. In the meantime, clean and finely dice the vegetables. Remove the ham and add the vegetables and beans. Blanch the tomatoes, quarter them, and deseed them. After about 20 minutes, add them to the soup. Simmer for at least another 30 minutes. About 8 minutes before the end, add the herbs and pasta and season with salt and pepper.
