Mini leek quiches

Ingredients for 2 servings:

  • 2 stalk(s) leeks
  • 200 g cream cheese
  • 1 pkt. pizza dough (refrigerated section)
  • 2 eggs
  • butter
  • nutmeg
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Slice the leeks (wash thoroughly beforehand, otherwise the sand will crunch between the teeth) into rings and sauté in a little butter. Whisk the cream cheese with two eggs, nutmeg, salt, and pepper. Line greased baking dishes with the pizza dough, spread the leeks on top, and pour the egg mixture over them. Place the mini quiches in the oven and bake for about 15-20 minutes (at 200°C) until golden brown. Like almost all of my recipes, this one can be wonderfully varied (depending on what you have at home): Instead of the leeks, you can also use frozen peas (they don’t even need to be thawed) or zucchini (in which case the nutmeg is promptly replaced with curry powder). If you like, you can add strips of cooked ham. A mixture of spring onions and mushrooms, or green asparagus (sliced ​​diagonally) and well-drained tuna in its own juices also tastes very good.
