Ingredients for 2 servings:
- 4 rolls (multigrain toast rolls)
- 150 g tomatoes
- 20 g spring onions
- 75 g mushrooms
- 125g mozzarella
- 1 tbsp olive oil
- 1 handful of basil
- salt and pepper
- possibly cream cheese, with herbs or pepper-chili

Dice the tomatoes, mushrooms, mozzarella, and spring onions. Mix everything together with the oil, pepper, and salt and let it sit for a moment. Fold the sliced basil into the mixture and spread it all on the buns. Bake on the middle rack of a hot oven at 175°C until the mozzarella has melted. You can also fold in a tablespoon of cream cheese (e.g., herb or chili pepper) into the mixture. It also tastes delicious.
