Ingredients for 2 servings:

  • 4 rolls (multigrain toast rolls)
  • 150 g tomatoes
  • 20 g spring onions
  • 75 g mushrooms
  • 125g mozzarella
  • 1 tbsp olive oil
  • 1 handful of basil
  • salt and pepper
  • possibly cream cheese, with herbs or pepper-chili

Dice the tomatoes, mushrooms, mozzarella, and spring onions. Mix everything together with the oil, pepper, and salt and let it sit for a moment. Fold the sliced ​​basil into the mixture and spread it all on the buns. Bake on the middle rack of a hot oven at 175°C until the mozzarella has melted. You can also fold in a tablespoon of cream cheese (e.g., herb or chili pepper) into the mixture. It also tastes delicious.
