Mini spinach pizzas

Ingredients for 4 servings:

  • 350 g Flour Type 405
  • ½ pack of dry yeast
  • 1 tsp salt
  • 250 ml water
  • 75 g margarine
  • 450 g frozen spinach, young, chopped
  • ¼ onion(s)
  • 2 cloves garlic
  • 2 balls of mozzarella
  • n. B. sugar
  • Vegeta
  • pepper

Instructions

Working time approx. 15 minutes; Rest time approx. 3 hours; Cooking/baking time approx. 25 minutes; Total time approx. 3 hours 40 minutes

Heat the water until it is just lukewarm. Melt the margarine in it. Combine the flour, yeast, and salt in a mixing bowl. Add the water-margarine mixture and quickly knead everything into a firm dough. Let the dough rise in a warm place until it has doubled in size. In the meantime, heat a little oil in a saucepan. Add the finely chopped onion and garlic, then caramelize with a little sugar. Add the spinach and finish cooking. At the end of the cooking time, add half a ball of finely chopped mozzarella and melt it in the spinach. Season everything with Vegeta and black pepper. Roll out the dough thinly and cut out round shapes using a plastic cup. Place the circles on a baking sheet lined with baking paper and spread a teaspoon of spinach on each one. Top the spinach with finely chopped mozzarella. Bake the mini pizzas at 200 degrees Celsius for about 25 minutes.
