Ingredients for 1 servings:

  • 14 sprigs of mint, spearmint or peppermint
  • 1 kg sugar

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

or mint pesto, made from spearmint or peppermint

Pick the leaves from the spearmint (Metha spicata), also called curly mint. Wash them, spin dry, and allow them to dry slightly. They should still be slightly fresh and not completely dry. I weigh/chop the mint with a large kitchen knife and layer it with the sugar in a large jar. The essential oil then dissolves into the sugar. Once I’ve processed everything, I shake everything vigorously and let the jar stand open so the mint doesn’t rot and can dry out, about 2-3 days, depending on the amount. The sugar crystallizes with the mint oil and becomes coarse. This sugar can now be used for baking, desserts, or drinks. If you need it ground, you can grind it in a mortar or grinder. The spearmint has a typical spearmint flavor and is pleasant. The peppermint is naturally sharper and therefore much fresher!
