Ingredients for 1 servings:

  • 750 g Mirabelle plums, weight after pitting
  • 1 large firm mango(s) (400 g after peeling and pitting), cut into small pieces
  • 200 g cane sugar
  • 200 ml vinegar (raspberry vinegar)
  • 175 ml vinegar (malt vinegar)
  • 1 tsp salt
  • 1 piece(s) ginger, walnut-sized, chopped
  • 1 large onion(s), chopped
  • 4 garlic cloves, squeezed
  • 1 tbsp curry powder, Madras
  • ½ tsp chili powder
  • 1 tsp ginger powder
  • ½ tsp cinnamon
  • 1 tsp all-spice
  • 2 tsp cardamom
  • 1 tsp black cumin

Working time approx. 45 minutes; Total time approx. 45 minutes

Indian inspired

Bring the fruit, onion, and garlic to a boil in the vinegar and simmer for about 25 minutes, until the fruit is soft. If the mixture is still too chunky, briefly mash it with a hand blender. Stir in the sugar and continue to simmer on low heat for 35-40 minutes, until the liquid has almost evaporated. Stir in the salt, ginger, and all the other spices during the last 5 minutes. Remove from the heat, pour into sterilized jars, and seal immediately. Let it steep for at least a month. Shelf life: at least 6 months.
